WHere is a home-style take on a beverage featured on a new drinks list. This is a party-sized premix that's bursting with tastes of the holiday season, rendering it ideal for a festive gathering. Reserve the remaining citrus syrup you can use for brunch beverages, desserts, or for more rounds of bikinis.
Bikini Recipe
Yields 10 guests
Ingredients for the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
For the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Directions
To prepare the Cordial: Put the listed components inside a saucepan, bring to a simmer, stirring so the sugar melts. Next, turn off the burner and let it to cool entirely. Decant to a sealable bottle, close it and refrigerate it in the refrigerator, it can be stored for around four weeks.
Preparing the Premix: Mix all the liquid ingredients into one large bottle, allow it to infuse for one hour, then filter it , ideally through muslin, so it's perfectly clear.
When ready to serve: Pour 85ml of your cocktail base to a mixing glass packed with ice, and agitate gently for one minute to chill. Pour to a chilled martini glass or a similar vessel, decorate with a few cranberries and complete it with a brief mist of the essential oil over the top.
